- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 3 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon oregano
- Salt and pepper to taste
- 1/2 cup sour cream
- 1/2 cup shredded Monterey Jack cheese
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until softened.
- Add garlic and cook for 1 minute until fragrant.
- Add chicken breasts and sear for 3-4 minutes per side.
- Pour in chicken broth, white beans, diced green chilies, cumin, chili powder, oregano, salt, and pepper.
- Bring to a simmer and cook for 20-25 minutes until chicken is cooked through.
- Remove chicken, shred it, and return to the pot.
- Stir in sour cream and heat through.
- Ladle chili into bowls, top with shredded cheese and fresh cilantro, and serve warm.
Notes
Serve with warm tortillas or cornbread. Adjust spice level with more chili powder if desired.
