White Chicken Chili Recipe for Cozy Nights

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 3 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1/2 cup shredded Monterey Jack cheese
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until softened.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Add chicken breasts and sear for 3-4 minutes per side.
  5. Pour in chicken broth, white beans, diced green chilies, cumin, chili powder, oregano, salt, and pepper.
  6. Bring to a simmer and cook for 20-25 minutes until chicken is cooked through.
  7. Remove chicken, shred it, and return to the pot.
  8. Stir in sour cream and heat through.
  9. Ladle chili into bowls, top with shredded cheese and fresh cilantro, and serve warm.

Notes

Serve with warm tortillas or cornbread. Adjust spice level with more chili powder if desired.
