  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Flour tortillas, for serving
  • Optional toppings: sour cream, salsa, guacamole, shredded cheese

Instructions

  1. In a large bowl, mix chili powder, paprika, garlic powder, cumin, salt, and black pepper.
  2. Add sliced chicken to the spice mix and toss to coat evenly.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  4. Add chicken and cook until fully cooked and lightly browned, about 5-7 minutes. Remove from skillet.
  5. Add remaining olive oil to the skillet, then sauté bell peppers and onions until tender-crisp, about 4-5 minutes.
  6. Return chicken to the skillet and toss everything together for 1-2 minutes.
