- 1 lb boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Flour tortillas, for serving
- Optional toppings: sour cream, salsa, guacamole, shredded cheese
Instructions
- In a large bowl, mix chili powder, paprika, garlic powder, cumin, salt, and black pepper.
- Add sliced chicken to the spice mix and toss to coat evenly.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add chicken and cook until fully cooked and lightly browned, about 5-7 minutes. Remove from skillet.
- Add remaining olive oil to the skillet, then sauté bell peppers and onions until tender-crisp, about 4-5 minutes.
- Return chicken to the skillet and toss everything together for 1-2 minutes.
- Serve hot on flour tortillas with your favorite toppings.
Notes
For extra flavor, marinate the chicken in the spice mix for 30 minutes before cooking. Serve with lime wedges for a fresh twist.
