- 1 lb ground beef
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup corn kernels
- 1 can black beans, drained and rinsed
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Sauté onion, garlic, and bell peppers until softened.
- Add ground beef, chili powder, cumin, smoked paprika, salt, and pepper; cook until browned.
- Stir in corn and black beans, cooking for another 5 minutes.
- Sprinkle shredded cheddar cheese on top if desired and cover until melted.
- Serve hot, optionally with tortillas or rice.
Notes
Adjust spices to taste for more or less heat. Leftovers can be stored in the fridge for 2-3 days.
