Ingredients

  • 1 lb ground beef
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup corn kernels
  • 1 can black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté onion, garlic, and bell peppers until softened.
  3. Add ground beef, chili powder, cumin, smoked paprika, salt, and pepper; cook until browned.
  4. Stir in corn and black beans, cooking for another 5 minutes.
  5. Sprinkle shredded cheddar cheese on top if desired and cover until melted.
  6. Serve hot, optionally with tortillas or rice.

Notes

Adjust spices to taste for more or less heat. Leftovers can be stored in the fridge for 2-3 days.
