Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into pieces
  • 1 cup jasmine rice
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup diced bell peppers
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces and cook until lightly browned and cooked through.
  3. Add onion, bell peppers, and garlic; sautΓ© for 3-4 minutes until softened.
  4. Stir in soy sauce, honey, and ground ginger.
  5. Add rice and pineapple chunks and 1 1/2 cups water.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until rice is tender and liquid is absorbed.
  7. Fluff rice with a fork, season with salt and pepper as needed.
  8. Garnish with sliced green onions and serve warm.

Notes

For extra flavor, use fresh ginger instead of ground. You can also add snap peas or carrots for more vegetables.
