- 1 lb boneless, skinless chicken thighs, cut into pieces
- 1 cup jasmine rice
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup diced bell peppers
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken pieces and cook until lightly browned and cooked through.
- Add onion, bell peppers, and garlic; sautΓ© for 3-4 minutes until softened.
- Stir in soy sauce, honey, and ground ginger.
- Add rice and pineapple chunks and 1 1/2 cups water.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until rice is tender and liquid is absorbed.
- Fluff rice with a fork, season with salt and pepper as needed.
- Garnish with sliced green onions and serve warm.
Notes
For extra flavor, use fresh ginger instead of ground. You can also add snap peas or carrots for more vegetables.
