Ingredients

  • 2 cups cooked rice
  • 2 chicken breasts, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped cilantro
  • 1 lime, cut into wedges
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken with salt and pepper, then cook until golden and cooked through, about 6-8 minutes.
  3. In a separate pan, sauté corn until slightly charred, 3-4 minutes.
  4. In a small bowl, mix mayonnaise, sour cream, chili powder, and smoked paprika to make the sauce.
  5. Assemble the rice bowls: place rice at the bottom, top with chicken and corn.
  6. Drizzle the creamy sauce over the top.
  7. Sprinkle with cotija cheese and chopped cilantro.
  8. Serve with lime wedges on the side.

Notes

For extra flavor, grill the chicken and corn instead of pan-cooking. Adjust chili powder to your spice preference.
