Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken with salt and pepper, then cook until golden and cooked through, about 6-8 minutes.
- In a separate pan, sauté corn until slightly charred, 3-4 minutes.
- In a small bowl, mix mayonnaise, sour cream, chili powder, and smoked paprika to make the sauce.
- Assemble the rice bowls: place rice at the bottom, top with chicken and corn.

Notes
