Spanish Rice with Ground Beef

Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 1 can (15 oz) tomato sauce
  • 1 1/2 cups beef broth
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 2 tablespoons chopped parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until softened.
  3. Add ground beef and cook until browned.
  4. Drain excess grease if needed.
  5. Stir in garlic, paprika, cumin, chili powder, salt, and black pepper.
  6. Add rice and stir to coat with seasoning.
  7. Pour in tomato sauce and beef broth.
  8. Bring to a simmer.
  9. Cover and cook for 18–20 minutes until rice is tender.
  10. Remove from heat and let rest for 5 minutes.
  11. Fluff with a fork and garnish with parsley.
  12. Serve warm.

Notes

You can add peas or bell peppers for extra color and flavor. This dish works well as a main meal or a hearty side.
