- 1 whole chicken (about 4 lbs)
- 4 cups chicken broth
- 3 carrots, sliced
- 3 celery stalks, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 2 cups egg noodles or rice (optional)
Instructions
- Place whole chicken in the slow cooker.
- Add carrots, celery, onion, garlic, bay leaves, thyme, parsley, salt, and pepper.
- Pour in chicken broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove chicken, shred meat, and discard bones and skin.
- Return shredded chicken to the slow cooker.
- Add noodles or rice if desired and cook for an additional 20-30 minutes until tender.
- Adjust seasoning and serve hot.
Notes
For extra flavor, add a splash of lemon juice or fresh herbs before serving. Leftovers can be stored in the fridge for 3-4 days.
