Description

A hearty slow cooker whole chicken soup made with tender chicken, fresh vegetables, and flavorful herbs, perfect for an easy and comforting meal.


Ingredients

  • 1 whole chicken (about 4 lbs)
  • 4 cups chicken broth
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups egg noodles or rice (optional)

Instructions

  1. Place whole chicken in the slow cooker.
  2. Add carrots, celery, onion, garlic, bay leaves, thyme, parsley, salt, and pepper.
  3. Pour in chicken broth.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Remove chicken, shred meat, and discard bones and skin.
  6. Return shredded chicken to the slow cooker.
  7. Add noodles or rice if desired and cook for an additional 20-30 minutes until tender.
  8. Adjust seasoning and serve hot.

Notes

For extra flavor, add a splash of lemon juice or fresh herbs before serving. Leftovers can be stored in the fridge for 3-4 days.
