Description

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, thinly sliced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 cup beef broth

Instructions

  1. Preheat the oven to 375°F.
  2. Heat olive oil in a skillet and sauté onion and garlic until fragrant.
  3. Add ground beef, paprika, cumin, salt, and pepper, cooking until browned.
  4. Lightly grease a baking dish and layer half of the sliced potatoes on the bottom.
  5. Add half of the ground beef mixture and half of the chopped vegetables.
  6. Repeat layers with remaining potatoes, beef, and vegetables.
  7. Pour beef broth evenly over the casserole.
  8. Cover with foil and bake for 50 minutes.
  9. Remove foil and bake an additional 10-15 minutes until potatoes are tender.
  10. Let rest briefly before serving.
