- 1 lb ground beef
- 4 medium potatoes, thinly sliced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1 teaspoon dried parsley
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1 cup beef broth
Instructions
- Preheat the oven to 375°F.
- Heat olive oil in a skillet and sauté onion and garlic until fragrant.
- Add ground beef, paprika, cumin, salt, and pepper, cooking until browned.
- Lightly grease a baking dish and layer half of the sliced potatoes on the bottom.
- Add half of the ground beef mixture and half of the chopped vegetables.
- Repeat layers with remaining potatoes, beef, and vegetables.
- Pour beef broth evenly over the casserole.
- Cover with foil and bake for 50 minutes.
- Remove foil and bake an additional 10-15 minutes until potatoes are tender.
- Let rest briefly before serving.
