Ingredients

- 1 cup quinoa, rinsed and cooked
- 6 large eggs
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/2 cup chopped spinach
- 1/4 cup diced onions
- 1 teaspoon olive oil
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
Instructions
- Preheat oven to 350Β°F (175Β°C) and grease a baking dish with olive oil or cooking spray.
- In a large bowl, whisk eggs with milk, salt, pepper, and garlic powder.
- Stir in cooked quinoa, shredded cheese, bell peppers, spinach, and onions.
- Pour mixture into prepared baking dish.
- Bake for 30-35 minutes until eggs are set and top is lightly golden.
- Allow to cool for 5 minutes before slicing and serving.
Notes
This bake can be prepared the night before and baked in the morning. Customize with your favorite vegetables or herbs.
