Description

A healthy and protein-packed savory quinoa breakfast bake loaded with eggs, vegetables, and cheese, perfect for meal prep or a hearty morning meal.


Ingredients

  • 1 cup quinoa, rinsed and cooked
  • 6 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup diced onions
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 350Β°F (175Β°C) and grease a baking dish with olive oil or cooking spray.
  2. In a large bowl, whisk eggs with milk, salt, pepper, and garlic powder.
  3. Stir in cooked quinoa, shredded cheese, bell peppers, spinach, and onions.
  4. Pour mixture into prepared baking dish.
  5. Bake for 30-35 minutes until eggs are set and top is lightly golden.
  6. Allow to cool for 5 minutes before slicing and serving.

Notes

This bake can be prepared the night before and baked in the morning. Customize with your favorite vegetables or herbs.
