Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) pumpkin puree
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, green onions

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until softened.
  3. Add ground beef and cook until browned, breaking it apart.
  4. Stir in garlic, chili powder, cumin, smoked paprika, salt, and pepper.
  5. Add pumpkin puree, diced tomatoes, kidney beans, and beef broth.
  6. Bring to a simmer and cook for 20-25 minutes, stirring occasionally.
  7. Taste and adjust seasoning as needed.
  8. Serve hot with desired toppings.

Notes

This chili thickens as it sits. Add extra broth if needed. Great for meal prep and leftovers.
