- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (15 oz) pumpkin puree
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 2 cups beef broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Optional toppings: sour cream, shredded cheese, green onions
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until softened.
- Add ground beef and cook until browned, breaking it apart.
- Stir in garlic, chili powder, cumin, smoked paprika, salt, and pepper.
- Add pumpkin puree, diced tomatoes, kidney beans, and beef broth.
- Bring to a simmer and cook for 20-25 minutes, stirring occasionally.
- Taste and adjust seasoning as needed.
- Serve hot with desired toppings.
Notes
This chili thickens as it sits. Add extra broth if needed. Great for meal prep and leftovers.
