- 2 tablespoons butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups cooked chicken, shredded
- 1 package (16 oz) potato gnocchi
- 1 cup spinach leaves
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat.
- Add onion, garlic, carrots, and celery; sautΓ© until vegetables are tender, about 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add gnocchi and cook according to package instructions, usually 2-3 minutes until they float.
- Stir in cooked chicken, heavy cream, spinach, and dried thyme.
- Simmer for 5 minutes until heated through and spinach is wilted.
- Season with salt and pepper to taste.
- Serve warm with crusty bread if desired.
Notes
For added flavor, sprinkle with Parmesan cheese before serving. Leftovers can be stored in the refrigerator for 2-3 days.
