Olive Garden Chicken Gnocchi Soup


Description

Ingredients

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) potato gnocchi
  • 1 cup spinach leaves
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add onion, garlic, carrots, and celery; sautΓ© until vegetables are tender, about 5 minutes.
  3. Pour in chicken broth and bring to a boil.
  4. Add gnocchi and cook according to package instructions, usually 2-3 minutes until they float.
  5. Stir in cooked chicken, heavy cream, spinach, and dried thyme.
  6. Simmer for 5 minutes until heated through and spinach is wilted.
  7. Season with salt and pepper to taste.
  8. Serve warm with crusty bread if desired.

Notes

For added flavor, sprinkle with Parmesan cheese before serving. Leftovers can be stored in the refrigerator for 2-3 days.
