- 1 lb ground beef
- 2 tablespoons olive oil
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1/2 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped
- 1/4 cup crumbled feta cheese
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced onion and cook until softened.
- Add ground beef and cook until browned.
- Drain excess grease if needed.
- Stir in garlic, oregano, paprika, salt, and black pepper.
- Add bell pepper and zucchini.
- Cook for 5β7 minutes until vegetables are tender.
- Add cherry tomatoes and cook for 2 minutes.
- Remove from heat.
- Top with fresh parsley and crumbled feta.
- Serve warm.
