Ingredients

  • 1 lb ground beef
  • 2 tablespoons olive oil
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup crumbled feta cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced onion and cook until softened.
  3. Add ground beef and cook until browned.
  4. Drain excess grease if needed.
  5. Stir in garlic, oregano, paprika, salt, and black pepper.
  6. Add bell pepper and zucchini.
  7. Cook for 5–7 minutes until vegetables are tender.
  8. Add cherry tomatoes and cook for 2 minutes.
  9. Remove from heat.
  10. Top with fresh parsley and crumbled feta.
  11. Serve warm.
