Mediterranean Ground Beef Skillet


Description

A quick and flavorful Mediterranean ground beef skillet loaded with herbs, tomatoes, and olives for an easy one-pan dinner.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until softened.
  3. Add ground beef and cook until browned, breaking it apart.
  4. Stir in garlic, oregano, cumin, salt, and pepper.
  5. Add cherry tomatoes and olives and cook for 3-4 minutes.
  6. Reduce heat and sprinkle feta cheese over the skillet.
  7. Remove from heat and garnish with fresh parsley.
  8. Serve warm.

Notes

Serve with rice, pita bread, or over greens. You can add spinach for extra vegetables.
