Ingredients

- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, sliced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until softened.
- Add ground beef and cook until browned, breaking it apart.
- Stir in garlic, oregano, cumin, salt, and pepper.
- Add cherry tomatoes and olives and cook for 3-4 minutes.
- Reduce heat and sprinkle feta cheese over the skillet.
- Remove from heat and garnish with fresh parsley.
- Serve warm.
Notes
Serve with rice, pita bread, or over greens. You can add spinach for extra vegetables.
