Mashed Potato Pancakes with Ground Beef Filling

Ingredients

  • 2 cups mashed potatoes
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup shredded cheddar cheese
  • 1 egg, beaten
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a skillet, heat olive oil over medium heat and cook onion and garlic until soft.
  2. Add ground beef, season with salt and pepper, and cook until browned. Remove from heat and let cool slightly.
  3. Mix mashed potatoes with beaten egg, flour, and a pinch of salt and pepper.
  4. Take a portion of mashed potato mixture and flatten it into a patty.
  5. Place a spoonful of cooked ground beef and a sprinkle of cheddar cheese in the center, then cover with another portion of mashed potatoes and seal edges.
  6. Heat a non-stick skillet over medium heat and cook pancakes for 3-4 minutes per side until golden brown and crispy.
  7. Garnish with fresh parsley and serve warm.

Notes

You can prepare the filling in advance. For extra crispiness, bake in a preheated oven at 375Β°F (190Β°C) for 10 minutes after pan-frying.
