- 2 cups mashed potatoes
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup shredded cheddar cheese
- 1 egg, beaten
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a skillet, heat olive oil over medium heat and cook onion and garlic until soft.
- Add ground beef, season with salt and pepper, and cook until browned. Remove from heat and let cool slightly.
- Mix mashed potatoes with beaten egg, flour, and a pinch of salt and pepper.
- Take a portion of mashed potato mixture and flatten it into a patty.
- Place a spoonful of cooked ground beef and a sprinkle of cheddar cheese in the center, then cover with another portion of mashed potatoes and seal edges.
- Heat a non-stick skillet over medium heat and cook pancakes for 3-4 minutes per side until golden brown and crispy.
- Garnish with fresh parsley and serve warm.
Notes
You can prepare the filling in advance. For extra crispiness, bake in a preheated oven at 375Β°F (190Β°C) for 10 minutes after pan-frying.
