Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 lemon, sliced thinly
  • 2 teaspoons fresh thyme leaves
  • 3 cloves garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat chicken thighs dry and season with salt, pepper, and minced garlic.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Place chicken thighs skin-side down and sear for 4-5 minutes until golden brown.
  5. Flip chicken, add lemon slices and thyme around the pan.
  6. Transfer the skillet to the oven and roast for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C).
  7. Remove from oven and let rest 5 minutes before serving.

Notes

For extra flavor, marinate chicken with lemon juice, garlic, and thyme for 30 minutes before cooking.
