- 2 tablespoons olive oil
- 1 lemon, sliced thinly
- 2 teaspoons fresh thyme leaves
- 3 cloves garlic, minced
- Salt and black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Pat chicken thighs dry and season with salt, pepper, and minced garlic.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Place chicken thighs skin-side down and sear for 4-5 minutes until golden brown.
- Flip chicken, add lemon slices and thyme around the pan.
- Transfer the skillet to the oven and roast for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C).
- Remove from oven and let rest 5 minutes before serving.
Notes
For extra flavor, marinate chicken with lemon juice, garlic, and thyme for 30 minutes before cooking.
