Julia Child’s Ground Beef Patties

Ingredients

  • 1 lb ground beef
  • 1/2 cup finely chopped onions
  • 1 clove garlic, minced
  • 1 large egg
  • 2 tablespoons milk
  • 1/4 cup breadcrumbs
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 1 tablespoon olive oil

Instructions

  1. In a bowl, combine ground beef, onions, garlic, egg, milk, breadcrumbs, parsley, salt, and pepper.
  2. Mix gently until just combined.
  3. Form the mixture into evenly sized patties.
  4. Heat butter and olive oil in a skillet over medium heat.
  5. Add patties to the skillet and cook for 4–5 minutes per side until browned and cooked through.
  6. Remove from heat and let rest briefly before serving.

Notes

Handle the meat lightly to keep the patties tender. Serve with potatoes or a green salad for a classic meal.
