High Protein Rotisserie Chicken Broccoli Pasta


Description

A high protein pasta made with tender rotisserie chicken, fresh broccoli, and a light creamy sauce that comes together quickly for an easy, satisfying meal.


Ingredients

  • 8 oz high-protein pasta
  • 2 cups rotisserie chicken, shredded
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 cup Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup pasta cooking water
  • Salt and pepper to taste
  • Red pepper flakes, optional

Instructions

  1. Cook pasta according to package instructions, adding broccoli during the last 2 minutes of cooking.
  2. Reserve 1/2 cup pasta water, then drain pasta and broccoli.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Add shredded rotisserie chicken and heat through.
  6. Reduce heat to low and stir in Greek yogurt, Parmesan cheese, and reserved pasta water.
  7. Add cooked pasta and broccoli and toss until coated.
  8. Season with salt, pepper, and red pepper flakes if using.
  9. Serve warm.

Notes

Use whole wheat or chickpea pasta for extra protein. Add lemon juice for a fresh finish if desired.
