A high protein pasta made with tender rotisserie chicken, fresh broccoli, and a light creamy sauce that comes together quickly for an easy, satisfying meal.

- 8 oz high-protein pasta
- 2 cups rotisserie chicken, shredded
- 2 cups broccoli florets
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 cup Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1/2 cup pasta cooking water
- Salt and pepper to taste
- Red pepper flakes, optional
Instructions
- Cook pasta according to package instructions, adding broccoli during the last 2 minutes of cooking.
- Reserve 1/2 cup pasta water, then drain pasta and broccoli.
- Heat olive oil in a large skillet over medium heat.
- Add garlic and cook for 30 seconds until fragrant.
- Add shredded rotisserie chicken and heat through.
- Reduce heat to low and stir in Greek yogurt, Parmesan cheese, and reserved pasta water.
- Add cooked pasta and broccoli and toss until coated.
- Season with salt, pepper, and red pepper flakes if using.
- Serve warm.
Notes
Use whole wheat or chickpea pasta for extra protein. Add lemon juice for a fresh finish if desired.
