Description

Delicious ground beef enchiladas baked with a savory sauce and melted cheese, perfect for a family dinner.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 810 flour or corn tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: sour cream, sliced olives, chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef with onion and garlic until browned. Drain excess fat.
  3. Stir in chili powder, cumin, salt, and pepper.
  4. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with a portion of the beef mixture and a sprinkle of cheese, then roll and place seam-side down in the dish.
  6. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
  8. Garnish with sour cream, olives, or cilantro if desired before serving.

Notes

You can prepare enchiladas ahead and refrigerate before baking. Adjust spice level with extra chili powder or hot sauce.
