- 1 medium kabocha squash
- 1 lb ground beef
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 cup diced tomatoes
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1/2 cup shredded mozzarella cheese
- Fresh parsley for garnish
Instructions
- Preheat oven to 400Β°F.
- Cut kabocha squash in half and remove seeds.
- Brush squash with olive oil and season with salt and pepper.
- Place cut-side down on a baking sheet and roast for 35-40 minutes until tender.
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic and cook until softened.
- Add ground beef and cook until browned.
- Stir in diced tomatoes, paprika, cumin, salt, and pepper.
- Fill roasted squash halves with the beef mixture.
- Top with shredded cheese and bake for 10 minutes until melted.
- Garnish with fresh parsley and serve.
Notes
You can swap mozzarella with cheddar or add cooked rice to the filling for extra heartiness.
