- 1 lb ground beef
- 12 oz egg noodles
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 1/2 cup beef broth
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded mozzarella or cheddar cheese
- Fresh parsley for garnish
Instructions
- Preheat oven to 375Β°F (190Β°C) and grease a casserole dish.
- Cook egg noodles according to package instructions; drain and set aside.
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic and sautΓ© until fragrant.
- Add ground beef and cook until browned; drain excess fat.
- Stir in mushrooms and cook until softened.
- Add cream of mushroom soup, sour cream, beef broth, paprika, salt, and pepper and mix well.
- Combine cooked noodles with beef mixture and stir until evenly coated.
- Transfer to prepared casserole dish and sprinkle cheese on top.
- Bake for 25β30 minutes until bubbly and lightly golden.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, use a mix of mushrooms or add a splash of Worcestershire sauce. This casserole reheats well for leftovers.
