Deliciously cheesy quesadillas stuffed with seasoned ground beef and melty cheese, perfect for a quick meal or snack.
Ingredients

- 500g ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper, to taste
- 4 large flour tortillas
- 200g shredded cheddar cheese
- 2 tbsp olive oil
- Sour cream and salsa, for serving
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Add ground beef, cook until browned.
- Stir in diced bell pepper, chili powder, cumin, salt, and pepper. Cook for 5 more minutes.
- Remove from heat.
- Place a tortilla on a clean surface, sprinkle half with shredded cheese and spoon beef mixture on top.
- Fold tortilla over to close and press gently.
- Heat a clean skillet over medium heat, cook quesadilla 2-3 minutes per side until golden and cheese melts.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve with sour cream and salsa.
Notes
Feel free to add jalapeños for extra spice or substitute cheddar with a Mexican cheese blend for more flavor.
