- 500g ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables
- 1 can (400g) diced tomatoes
- 1 cup shredded cheddar cheese
- 1/2 cup beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat.
- Add the diced onion and minced garlic, sauté until translucent.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Stir in tomato paste, diced tomatoes, beef broth, oregano, basil, salt, and pepper.
- Add frozen mixed vegetables and simmer for 5-7 minutes.
- Transfer mixture to a casserole dish.
- Sprinkle shredded cheddar cheese evenly on top.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Remove from oven and let it rest for 5 minutes before serving.
Notes
You can customize this casserole by adding mushrooms or bell peppers. Leftovers can be refrigerated for up to 3 days.
