Ground Beef Casserole

Ingredients

  • 500g ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables
  • 1 can (400g) diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the diced onion and minced garlic, sauté until translucent.
  4. Add ground beef and cook until browned, breaking it up with a spoon.
  5. Stir in tomato paste, diced tomatoes, beef broth, oregano, basil, salt, and pepper.
  6. Add frozen mixed vegetables and simmer for 5-7 minutes.
  7. Transfer mixture to a casserole dish.
  8. Sprinkle shredded cheddar cheese evenly on top.
  9. Bake for 20-25 minutes until cheese is melted and bubbly.
  10. Remove from oven and let it rest for 5 minutes before serving.

Notes

You can customize this casserole by adding mushrooms or bell peppers. Leftovers can be refrigerated for up to 3 days.
