- 2 cups water
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 cup sliced mushrooms

- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- Fresh parsley or cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and ginger; sautΓ© for 2-3 minutes until fragrant.
- Add ground turmeric and stir for 30 seconds.
- Add chicken pieces and cook until lightly browned.
- Pour in chicken broth and water, then add carrots, celery, and mushrooms.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until chicken is cooked and vegetables are tender.
- Season with salt, pepper, and red pepper flakes if using.
- Ladle soup into bowls and garnish with fresh parsley or cilantro.
- Serve warm.
