French Onion Ground Beef and Rice Casserole

  • 1 cup uncooked rice
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded Gruyere or Swiss cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375Β°F (190Β°C).
  2. Heat olive oil in a skillet over medium heat and sautΓ© onions until caramelized, about 10-12 minutes.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Add ground beef and cook until browned, breaking it apart.
  5. Stir in uncooked rice, beef broth, thyme, salt, and pepper.
  6. Transfer mixture to a baking dish.
  7. Cover with foil and bake for 25-30 minutes until rice is tender.
  8. Remove foil, sprinkle shredded cheese over the top, and bake an additional 5-10 minutes until cheese is melted and bubbly.
  9. Garnish with fresh parsley and serve warm.

Notes

For deeper flavor, use caramelized onions from the previous day. Adjust seasonings to taste.
