Filipino Chicken Barbecue Recipe with the Best Authentic Marinade

Ingredients

  • 2 lbs chicken thighs or drumsticks
  • 1/2 cup banana ketchup
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup calamansi juice or lemon juice
  • 1/4 cup Sprite or 7Up
  • 6 cloves garlic, minced
  • 1 teaspoon ground black pepper
  • 1 tablespoon oyster sauce
  • 1 tablespoon oil
  • Bamboo skewers (soaked if grilling on sticks)

Instructions

  1. In a large bowl, combine banana ketchup, soy sauce, brown sugar, calamansi or lemon juice, Sprite, garlic, black pepper, oyster sauce, and oil.
  2. Mix well until sugar dissolves to form the marinade.
  3. Add chicken pieces and coat thoroughly.
  4. Cover and marinate for at least 4 hours, preferably overnight for best flavor.
  5. Preheat grill to medium heat.
  6. Thread chicken onto skewers if desired.
  7. Grill chicken, brushing with leftover marinade, for 20–30 minutes or until charred and fully cooked.
  8. Turn occasionally for even cooking.
  9. Serve with rice and pickled vegetables.

Notes

For extra authenticity, use banana ketchup and Sprite. Marinate overnight for the deepest flavor and the juiciest barbecue!
