A juicy, smoky, and flavor-packed Filipino Chicken Barbecue made with the best authentic-style marinade—sweet, tangy, savory, and absolutely irresistible.

- 2 lbs chicken thighs or drumsticks
- 1/2 cup banana ketchup
- 1/3 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup calamansi juice or lemon juice
- 1/4 cup Sprite or 7Up
- 6 cloves garlic, minced
- 1 teaspoon ground black pepper
- 1 tablespoon oyster sauce
- 1 tablespoon oil
- Bamboo skewers (soaked if grilling on sticks)
Instructions
- In a large bowl, combine banana ketchup, soy sauce, brown sugar, calamansi or lemon juice, Sprite, garlic, black pepper, oyster sauce, and oil.
- Mix well until sugar dissolves to form the marinade.
- Add chicken pieces and coat thoroughly.
- Cover and marinate for at least 4 hours, preferably overnight for best flavor.
- Preheat grill to medium heat.
- Thread chicken onto skewers if desired.
- Grill chicken, brushing with leftover marinade, for 20–30 minutes or until charred and fully cooked.
- Turn occasionally for even cooking.
- Serve with rice and pickled vegetables.
Notes
For extra authenticity, use banana ketchup and Sprite. Marinate overnight for the deepest flavor and the juiciest barbecue!
