Description

Ingredients

  • 2 slices whole-grain bread
  • 2 large eggs
  • 1/4 cup spinach leaves
  • 2 slices tomato
  • 1/4 avocado, sliced
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste
  • Optional: cheese slices

Instructions

  1. Heat olive oil or butter in a skillet over medium heat.
  2. Scramble or fry eggs to desired doneness, seasoning with salt and pepper.
  3. Toast the bread slices until golden brown.
  4. Layer spinach, tomato, avocado, and eggs on one slice of bread.
  5. Add cheese if desired.
  6. Top with the second slice of bread.
