- 4 bell peppers, tops cut off and seeds removed
- 6 large eggs
- 1/2 cup cooked breakfast sausage, crumbled
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced onions
- 1/4 cup diced tomatoes
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté onions and tomatoes until soft.
- In a bowl, whisk eggs and season with salt and pepper.
- Add cooked sausage and sautéed vegetables to the eggs and mix well.
- Place bell peppers in a baking dish and fill each with the egg mixture.
- Top with shredded cheddar cheese.
- Bake for 20-25 minutes or until eggs are set and peppers are tender.
- Let cool slightly before serving.
