A light and creamy pistachio mousse thatβs quick to make and perfect for any dessert occasion.
Ingredients

- 200g pistachios, shelled
- 50g sugar
- 300ml heavy cream
- 3 egg whites
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Grind the pistachios with sugar until finely powdered.
- Whip the heavy cream until soft peaks form.
- In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Gently fold the ground pistachios and vanilla extract into the whipped cream.
- Carefully fold in the beaten egg whites until fully incorporated.
- Divide the mousse into serving glasses.
- Chill in the refrigerator for at least 2 hours before serving.
- Optional: garnish with chopped pistachios or a drizzle of chocolate.

Ensure the egg whites are at room temperature for best volume. Serve chilled for optimal texture.
