Ingredients

- 2 slices whole grain bread
- 2 eggs
- 1/2 cup chopped kale
- 1/4 cup crumbled feta cheese

- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped kale and sauté for 2-3 minutes until wilted.
- Toast the bread slices to your liking.
- Cook eggs in the skillet (fried or scrambled) and season with salt and pepper.
- Place sautéed kale on the toasted bread.
- Top with cooked eggs and sprinkle with crumbled feta cheese.
