  • 1 teaspoon dried thyme
  • 2 medium sweet potatoes, cubed
  • 1 apple, sliced
  • 1 small red onion, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place sweet potatoes, apples, and red onions on a baking sheet.
  3. Drizzle with olive oil, salt, and pepper; toss to coat.
  4. In a small bowl, whisk together honey, soy sauce, apple cider vinegar, garlic, paprika, and thyme.
  5. Place chicken pieces on top of the vegetables.
  6. Brush chicken generously with the honey glaze.
  7. Bake for 25–30 minutes, basting halfway through.
  8. Cook until chicken is golden and vegetables are tender.
  9. Let rest for 5 minutes before serving.
