Ingredients

- 4 chicken thighs or breasts
- 2 tablespoons olive oil
- 3 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 medium sweet potatoes, cubed
- 1 apple, sliced
- 1 small red onion, sliced
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Place sweet potatoes, apples, and red onions on a baking sheet.
- Drizzle with olive oil, salt, and pepper; toss to coat.
- In a small bowl, whisk together honey, soy sauce, apple cider vinegar, garlic, paprika, and thyme.
- Place chicken pieces on top of the vegetables.
- Brush chicken generously with the honey glaze.
- Bake for 25–30 minutes, basting halfway through.
- Cook until chicken is golden and vegetables are tender.
- Let rest for 5 minutes before serving.
