An easy and comforting hobo casserole made with seasoned ground beef, tender potatoes, and melted cheese, perfect for a quick family dinner.
Ingredients

- 1 lb ground beef
- 4 medium potatoes, thinly sliced
- 1 small onion, sliced
- 1 can cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
Instructions
- Preheat the oven to 375°F.
- Heat olive oil in a skillet and brown the ground beef, seasoning with salt, pepper, garlic powder, and paprika.
- Lightly grease a baking dish and layer half of the sliced potatoes on the bottom.
- Add half of the cooked ground beef and sliced onion.
- Spread half of the cream of mushroom soup over the layer.
- Repeat the layers with remaining potatoes, beef, onion, and soup.
- Cover with foil and bake for 45 minutes.
- Remove foil, sprinkle shredded cheese on top, and bake uncovered for 10-15 minutes until bubbly and golden.
- Let rest for a few minutes before serving.
Notes
Slice the potatoes thinly to ensure even cooking. You can substitute ground turkey or add vegetables for variation.
