A beautiful layered gluten-free pumpkin trifle with creamy pudding, fluffy whipped topping, and spiced pumpkin cake—an easy, crowd-pleasing Thanksgiving dessert.


Ingredients

  • 1 gluten-free pumpkin cake or loaf, cubed
  • 2 cups pumpkin puree
  • 1 box instant vanilla or pumpkin pudding mix (gluten-free)
  • 2 cups cold milk
  • 1 tsp pumpkin pie spice
  • 1 container whipped topping
  • 1/4 cup crushed gluten-free gingersnaps (optional)
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Prepare the pudding by whisking the mix with cold milk until thickened.
  2. Stir pumpkin puree and pumpkin pie spice into the pudding mixture.
  3. Layer cubed gluten-free pumpkin cake in the bottom of a trifle dish.
  4. Add a layer of pumpkin pudding mixture.
  5. Add a layer of whipped topping.
  6. Repeat layers until dish is full.
  7. Top with crushed gluten-free gingersnaps or pecans if desired.
  8. Refrigerate for at least 2 hours before serving.

Notes

For richer flavor, chill overnight. You can swap pumpkin cake for gluten-free gingerbread or vanilla cake.
