- 6 small flour or corn tortillas
- 4 large eggs, scrambled
- 1/2 cup cooked bacon or sausage, crumbled
- 1/2 cup shredded cheddar or Monterey Jack cheese
- 1/4 cup diced bell peppers (optional)
- 1/4 cup diced onions (optional)
- 1 tablespoon butter or oil
- Salt and pepper to taste
- Salsa or sour cream for serving
Instructions
- Preheat oven to 375Β°F (190Β°C) and lightly grease a baking sheet.
- In a skillet, melt butter and sautΓ© onions and bell peppers until soft.
- Add scrambled eggs and cooked bacon or sausage, season with salt and pepper, and cook until eggs are set.
- Warm tortillas slightly to make them pliable.
- Spoon egg mixture onto each tortilla and sprinkle with shredded cheese.
- Roll tortillas tightly and place seam-side down on the baking sheet.
- Bake for 10-12 minutes until cheese is melted and taquitos are lightly golden.
- Serve with salsa or sour cream.
Notes
You can prepare the filling ahead of time and assemble before baking. Add hot sauce for extra flavor.
