Easy Breakfast Taquitos


Description

Quick and delicious breakfast taquitos filled with eggs, cheese, and your choice of breakfast meats, perfect for a grab-and-go morning meal.


Ingredients

  • 6 small flour or corn tortillas
  • 4 large eggs, scrambled
  • 1/2 cup cooked bacon or sausage, crumbled
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup diced bell peppers (optional)
  • 1/4 cup diced onions (optional)
  • 1 tablespoon butter or oil
  • Salt and pepper to taste
  • Salsa or sour cream for serving

Instructions

  1. Preheat oven to 375Β°F (190Β°C) and lightly grease a baking sheet.
  2. In a skillet, melt butter and sautΓ© onions and bell peppers until soft.
  3. Add scrambled eggs and cooked bacon or sausage, season with salt and pepper, and cook until eggs are set.
  4. Warm tortillas slightly to make them pliable.
  5. Spoon egg mixture onto each tortilla and sprinkle with shredded cheese.
  6. Roll tortillas tightly and place seam-side down on the baking sheet.
  7. Bake for 10-12 minutes until cheese is melted and taquitos are lightly golden.
  8. Serve with salsa or sour cream.

Notes

You can prepare the filling ahead of time and assemble before baking. Add hot sauce for extra flavor.
