- 6 small flour tortillas
- 4 large eggs
- 1/2 cup cooked bacon or sausage, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced onions
- 1/4 cup diced bell peppers
- 1 tablespoon olive oil
- Salt and pepper to taste
- Salsa for serving
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat.
- Scramble eggs with onions, bell peppers, salt, and pepper until cooked.
- Stir in cooked bacon or sausage and shredded cheese.
- Warm tortillas slightly to make them pliable.
- Place a portion of the egg mixture on each tortilla and roll tightly into taquitos.
- Place taquitos seam-side down on the prepared baking sheet.
- Bake for 10-12 minutes until golden and crispy.
- Serve warm with salsa.
