Easy Breakfast Taquitos

Ingredients

  • 6 small flour tortillas
  • 4 large eggs
  • 1/2 cup cooked bacon or sausage, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Salsa for serving

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat.
  3. Scramble eggs with onions, bell peppers, salt, and pepper until cooked.
  4. Stir in cooked bacon or sausage and shredded cheese.
  5. Warm tortillas slightly to make them pliable.
  6. Place a portion of the egg mixture on each tortilla and roll tightly into taquitos.
  7. Place taquitos seam-side down on the prepared baking sheet.
  8. Bake for 10-12 minutes until golden and crispy.
  9. Serve warm with salsa.

Notes
