Description

A quick and hearty breakfast skillet loaded with eggs, veggies, and melted cheese, perfect for starting your day off right.


Ingredients

  • 4 large eggs
  • 1 cup diced potatoes
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes and cook until tender, about 8-10 minutes.
  3. Add bell peppers and onions, sautΓ© for 3-4 minutes.
  4. Push vegetables to the side and crack eggs into the skillet.
  5. Cook eggs to desired doneness, stirring occasionally if desired.
  6. Sprinkle cheddar cheese over the skillet and cover until cheese melts.
  7. Season with salt and pepper.
  8. Garnish with fresh parsley and serve hot.

Notes

You can add cooked bacon or sausage for extra protein. Serve with toast for a complete meal.
