- 1 cup diced potatoes
- 1/2 cup diced bell peppers

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes and cook until tender, about 8-10 minutes.
- Add bell peppers and onions, sautΓ© for 3-4 minutes.
- Push vegetables to the side and crack eggs into the skillet.
- Cook eggs to desired doneness, stirring occasionally if desired.
- Sprinkle cheddar cheese over the skillet and cover until cheese melts.
- Season with salt and pepper.
