- 1/4 cup milk
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked bacon or sausage, optional
- Salt and pepper to taste

Instructions
- Preheat oven to 375Β°F (190Β°C) and grease a muffin tin or line with muffin liners.
- In a bowl, whisk eggs and milk together. Season with salt and pepper.
- Stir in bell peppers, onions, cheese, and cooked bacon or sausage if using.
- Pour the egg mixture evenly into the muffin cups.
- Bake for 18-20 minutes or until eggs are set and tops are lightly golden.
- Let cool slightly before removing from the tin.
- Serve warm or store in the refrigerator for up to 3 days.
