Description

Quick and easy breakfast egg muffins packed with vegetables, cheese, and protein, perfect for meal prep or a grab-and-go morning meal.


Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked bacon or sausage, optional
  • Salt and pepper to taste
  • Cooking spray or muffin liners

Instructions

  1. Preheat oven to 375Β°F (190Β°C) and grease a muffin tin or line with muffin liners.
  2. In a bowl, whisk eggs and milk together. Season with salt and pepper.
  3. Stir in bell peppers, onions, cheese, and cooked bacon or sausage if using.
  4. Pour the egg mixture evenly into the muffin cups.
  5. Bake for 18-20 minutes or until eggs are set and tops are lightly golden.
  6. Let cool slightly before removing from the tin.
  7. Serve warm or store in the refrigerator for up to 3 days.
