- 6 large eggs
- 1/2 cup cooked breakfast sausage or bacon, crumbled
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 4 large flour tortillas
- Salt and pepper to taste
- 1 tablespoon butter
Instructions
- Heat butter in a skillet over medium heat.
- Add bell peppers and onions and sautΓ© until softened.
- Whisk eggs with salt and pepper and pour into the skillet.
- Cook eggs, stirring gently, until softly scrambled.
- Stir in cooked sausage or bacon.
- Warm tortillas slightly.
- Spoon egg mixture onto tortillas and sprinkle with cheese.
- Roll into burritos and serve warm.
