Ingredients

  • 1/2 cup cooked bacon or sausage, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Salsa for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onions and bell peppers and sautΓ© until softened.
  3. Add bacon or sausage and cook until heated through.
  4. In a bowl, whisk eggs and pour into the skillet, scrambling until fully cooked.
  5. Warm tortillas in a separate skillet or microwave.
  6. Divide the egg mixture among tortillas and sprinkle with shredded cheese.
  7. Roll up the tortillas to form burritos.
  8. Serve with salsa.
