- 2 cups plain Greek yogurt
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup oats
- 1 cup mixed berries
- 1 teaspoon baking powder
- Pinch of salt
- Cooking spray or butter for greasing
Instructions
- Preheat oven to 375Β°F (190Β°C).
- Grease a baking dish with cooking spray or butter.
- In a bowl, whisk Greek yogurt, eggs, honey, and vanilla until smooth.
- Stir in oats, baking powder, and salt.
- Gently fold in mixed berries.
- Pour mixture into prepared baking dish.
- Bake for 30-35 minutes until set and lightly golden.
- Let cool slightly before serving.
Notes
Use fresh or frozen berries. Serve warm or chilled with extra yogurt on top if desired.
