Ingredients

  • 2 cups plain Greek yogurt
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup oats
  • 1 cup mixed berries
  • 1 teaspoon baking powder
  • Pinch of salt
  • Cooking spray or butter for greasing

Instructions

  1. Preheat oven to 375Β°F (190Β°C).
  2. Grease a baking dish with cooking spray or butter.
  3. In a bowl, whisk Greek yogurt, eggs, honey, and vanilla until smooth.
  4. Stir in oats, baking powder, and salt.
  5. Gently fold in mixed berries.
  6. Pour mixture into prepared baking dish.
  7. Bake for 30-35 minutes until set and lightly golden.
  8. Let cool slightly before serving.
