Description

A wholesome and delicious breakfast bake featuring nutty bulgur, fresh berries, and a hint of sweetness—perfect for a quick morning meal.


Ingredients

  • 1 cup bulgur wheat
  • 2 cups milk
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 cup mixed berries (blueberries, raspberries, or strawberries)
  • Pinch of salt
  • Butter for greasing

Instructions

  1. Preheat oven to 180°C (350°F) and grease a baking dish with butter.
  2. In a medium saucepan, bring milk to a gentle boil and stir in bulgur. Cook for 10-12 minutes until tender.
  3. In a bowl, whisk together eggs, honey, vanilla, cinnamon, and a pinch of salt.
  4. Combine the cooked bulgur with the egg mixture and fold in half of the berries.
  5. Pour the mixture into the prepared baking dish and top with remaining berries.
  6. Bake for 25-30 minutes, until set and lightly golden on top.
  7. Let cool slightly before serving. Enjoy warm.

Notes

You can swap bulgur with quinoa or oats for variation. Fresh or frozen berries work well.
