  • 1 pre-baked pie crust
  • 3 ripe bananas
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 1/2 cups whole milk
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream

Instructions

  1. In a medium saucepan, whisk together sugar, cornstarch, and salt.
  2. Gradually whisk in milk until smooth.
  3. Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil.
  4. Whisk a small amount of hot mixture into egg yolks, then return to the saucepan and cook 2 more minutes.
  5. Remove from heat and stir in butter and vanilla extract.
  6. Slice bananas and arrange in the pie crust.
  7. Pour the custard over the bananas, smoothing the top.
  8. Chill for at least 2 hours.
  9. Top with whipped cream before serving.

Notes

Use ripe bananas for maximum sweetness. Can be made a day ahead for convenience.
