- 3 ripe bananas
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 1/2 cups whole milk
- 3 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 cup whipped cream
Instructions
- In a medium saucepan, whisk together sugar, cornstarch, and salt.
- Gradually whisk in milk until smooth.
- Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil.
- Whisk a small amount of hot mixture into egg yolks, then return to the saucepan and cook 2 more minutes.
- Remove from heat and stir in butter and vanilla extract.
- Slice bananas and arrange in the pie crust.
- Pour the custard over the bananas, smoothing the top.
- Chill for at least 2 hours.
- Top with whipped cream before serving.
Notes
Use ripe bananas for maximum sweetness. Can be made a day ahead for convenience.
