- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup egg noodles
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sautΓ© until translucent.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in crushed tomatoes and beef broth.
- Add dried basil, salt, and pepper. Bring to a simmer.
- Add egg noodles and cook until tender, about 8-10 minutes.
- Reduce heat and stir in heavy cream.
- Simmer for 2-3 minutes until heated through.
- Serve hot, garnished with grated Parmesan cheese.
Notes
For a richer flavor, simmer the soup longer before adding cream. You can substitute pasta with rice if preferred.
