Ingredients

  • 12 oz pasta, cooked and drained
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 2 tablespoons chopped parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until softened.
  3. Add ground beef and cook until browned.
  4. Drain excess grease if needed.
  5. Stir in garlic, paprika, chili powder, salt, and black pepper.
  6. Add Rotel tomatoes and simmer for 3–4 minutes.
  7. Pour in heavy cream and stir until combined.
  8. Add shredded cheddar cheese and stir until melted.
  9. Add cooked pasta and toss to coat evenly.
  10. Simmer for 2–3 minutes until heated through.
  11. Garnish with parsley.
  12. Serve warm.

Notes
