Description
A rich and comforting creamy chicken stew made with tender chicken, earthy mushrooms, hearty potatoes, and a splash of wine for depth of flavor.
Ingredients

- 1.5 lbs chicken thighs, boneless and skinless
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 large potatoes, peeled and diced
- 1/2 cup white wine
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken with salt and pepper and brown on both sides, about 3-4 minutes per side. Remove and set aside.
- Add onion and garlic to the pot and sautΓ© until translucent.
- Add mushrooms and cook for 3-4 minutes until softened.
- Deglaze the pot with white wine, scraping up any browned bits.
- Add potatoes, chicken broth, thyme, and return chicken to the pot.
- Bring to a simmer and cook for 20-25 minutes until potatoes are tender and chicken is cooked through.
- Stir in heavy cream and adjust seasoning with salt and pepper.
- Garnish with fresh parsley and serve warm.
Notes
Use chicken thighs for extra tenderness. You can substitute heavy cream with half-and-half for a lighter stew.
