Creamy Chicken Stew Recipe with Mushrooms, Potatoes, and Wine


Description

A rich and comforting creamy chicken stew made with tender chicken, earthy mushrooms, hearty potatoes, and a splash of wine for depth of flavor.


Ingredients

  • 1.5 lbs chicken thighs, boneless and skinless
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 large potatoes, peeled and diced
  • 1/2 cup white wine
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken with salt and pepper and brown on both sides, about 3-4 minutes per side. Remove and set aside.
  3. Add onion and garlic to the pot and sautΓ© until translucent.
  4. Add mushrooms and cook for 3-4 minutes until softened.
  5. Deglaze the pot with white wine, scraping up any browned bits.
  6. Add potatoes, chicken broth, thyme, and return chicken to the pot.
  7. Bring to a simmer and cook for 20-25 minutes until potatoes are tender and chicken is cooked through.
  8. Stir in heavy cream and adjust seasoning with salt and pepper.
  9. Garnish with fresh parsley and serve warm.

Notes

Use chicken thighs for extra tenderness. You can substitute heavy cream with half-and-half for a lighter stew.
