Description
These cranberry crumble bars are sweet, tart, and perfectly crumbly, making them an ideal wintertime breakfast or snack.

- 1 cup all-purpose flour
- ½ cup rolled oats
- ½ cup brown sugar
- ¼ teaspoon salt
- ½ teaspoon baking powder
- ½ cup unsalted butter, melted
- 1 cup fresh or frozen cranberries
- ¼ cup sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 175°C (350°F) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, combine flour, oats, brown sugar, salt, and baking powder.
- Stir in melted butter until mixture is crumbly.
- Press half of the crumble mixture into the prepared pan to form the base.
- In another bowl, mix cranberries, sugar, cornstarch, and vanilla extract.
- Spread the cranberry mixture evenly over the base layer.
- Sprinkle the remaining crumble mixture on top of the cranberries.
- Bake for 30-35 minutes or until the top is golden brown.
- Allow to cool completely, then cut into bars.
Notes
For best results, use fresh cranberries. These bars can be stored in an airtight container for up to 5 days.
