Cranberry Crumble Bars


Description

These cranberry crumble bars are sweet, tart, and perfectly crumbly, making them an ideal wintertime breakfast or snack.


Ingredients

  • 1 cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup unsalted butter, melted
  • 1 cup fresh or frozen cranberries
  • ¼ cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 175°C (350°F) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine flour, oats, brown sugar, salt, and baking powder.
  3. Stir in melted butter until mixture is crumbly.
  4. Press half of the crumble mixture into the prepared pan to form the base.
  5. In another bowl, mix cranberries, sugar, cornstarch, and vanilla extract.
  6. Spread the cranberry mixture evenly over the base layer.
  7. Sprinkle the remaining crumble mixture on top of the cranberries.
  8. Bake for 30-35 minutes or until the top is golden brown.
  9. Allow to cool completely, then cut into bars.

Notes

For best results, use fresh cranberries. These bars can be stored in an airtight container for up to 5 days.
