Description
This Costco chicken scallion rice is savory, comforting, and incredibly easy, inspired by the popular warehouse favorite with tender chicken, fluffy rice, and fresh scallions.
Ingredients

- 2 cups cooked rotisserie chicken, chopped
- 2 cups cooked white rice
- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 scallions, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1/2 teaspoon sesame oil
- Salt and black pepper to taste
Instructions
- Heat butter and olive oil in a large skillet over medium heat.
- Add minced garlic and cook until fragrant.
- Add chopped chicken and cook until warmed through.
- Stir in cooked rice.
- Add soy sauce and sesame oil.
- Mix well until rice is evenly coated.
- Cook for 3–5 minutes, stirring occasionally.
- Add sliced scallions.
- Season with salt and black pepper.
- Stir and remove from heat.
- Serve warm.
Notes
For extra flavor, add a scrambled egg or a sprinkle of sesame seeds before serving. This recipe is perfect for quick lunches or easy dinners.
