Cookie Butter Brownie Pudding

  • 1 box brownie mix (plus ingredients required)
  • 1/2 cup cookie butter
  • 2 cups whole milk
  • 1/4 cup sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • Whipped cream for topping
  • Cookie crumbs for garnish

Instructions

  1. Prepare brownie mix according to package instructions and bake in a square pan. Let cool slightly.
  2. In a saucepan, whisk together milk, sugar, and cornstarch over medium heat until thickened.
  3. Remove from heat and stir in vanilla extract and cookie butter until smooth.
  4. Cut brownies into bite-sized pieces and place in serving dishes.
  5. Pour cookie butter pudding over brownies, covering evenly.
  6. Chill in refrigerator for at least 1 hour before serving.
  7. Top with whipped cream and sprinkle cookie crumbs before serving.

Notes

For extra richness, swirl additional cookie butter on top before chilling. Serve chilled or at room temperature.
