Classic Plumcake


Description

This classic plumcake is soft, moist, and lightly sweet, making it perfect as an easy breakfast plumcake or afternoon treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 ripe plums, sliced
  • Powdered sugar for topping

Instructions

  1. Preheat the oven to 350Β°F (175Β°C).
  2. Grease and flour a loaf pan.
  3. In a bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the vanilla extract and oil.
  6. In a separate bowl, whisk together the flour, baking powder, and salt.
  7. Add the dry ingredients alternately with the milk to the batter.
  8. Pour the batter into the prepared pan.
  9. Arrange the plum slices on top.
  10. Bake for 45–50 minutes until a toothpick inserted comes out clean.
  11. Let cool, then dust with powdered sugar before serving.

Notes

Use ripe but firm plums for the best texture. This plumcake is ideal for breakfast or coffee time.
