Description

A light and refreshing chicken salad packed with fresh vegetables and a zesty dressing.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine shredded chicken, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Chill for 10-15 minutes before serving for best flavor.

Notes

Use freshly cooked chicken for the best taste. You can also add avocado or feta cheese for extra richness.
