Ingredients

Instructions
- In a large bowl, combine shredded chicken, cherry tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill for 10-15 minutes before serving for best flavor.
Notes
Use freshly cooked chicken for the best taste. You can also add avocado or feta cheese for extra richness.
