Chicken Milanese Recipe with Caesar Salad

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups romaine lettuce, chopped
  • 1/4 cup Caesar dressing
  • Croutons and extra Parmesan for salad garnish

Instructions

  1. Pound chicken breasts to an even thickness.
  2. Season flour with salt and pepper, then dredge chicken in flour.
  3. Dip chicken in beaten eggs.
  4. Mix breadcrumbs with Parmesan and coat chicken thoroughly.
  5. Heat olive oil in a skillet over medium heat and cook chicken 3-4 minutes per side until golden and cooked through.
  6. In a large bowl, toss romaine lettuce with Caesar dressing, croutons, and extra Parmesan.
  7. Serve chicken alongside Caesar salad.

Notes

For extra crispiness, bake chicken in a 400Β°F oven for 5-7 minutes after pan-frying. Use fresh Parmesan for best flavor.
